Allima Cacao is a social enterprise that runs cacao production centres in collaboration with local community members in Peru. Its technical has developed various innovations such as the fermentation processes, drying, and the use of cocoa by-products such as mucilage, which were supported by Peruvian State entities such as the PNIA, Innóvate Peru and AGROIDEAS. In addition, it also develops technological and commercial innovations for the diversification of income of the cooperative and its members.
